Section 17.5 of the DJGPP FAQ list has some pointers that might help you. In particular, they mention a conversion tool:
`OBJ2COFF' is available from the Oulu repository, e.g. ftp://x2ftp.oulu.fi/pub/msdos/programming/convert/o2cv10.arj and from DJ Delorie's ftp server, e.g. ftp://ftp.delorie.com/pub/djgpp/contrib/o2cv06.arj.
If that tools comes with source (I don't know), you can probably extract anything about COFF from it.
